Born exclusively by apulian olives, among the ones with a more balanced taste, cultivated in a special climate in Apulia, worked in few hours after the harvest according to a modern technology; Crudo is a monovarietal with a middle fruity. On the nose it is intense and persistent, with strong note of hearts of artichoke, asparagus and green pepper mixed with almond tones. On the palate it is full, soft and tasteful, with a confirmation of herbaceous perceptions; on the closing it is fine and clear with an excellent balance between spicy and bitter.
