Manchego is one of the world’s cheeses with deep history and heritage. Originating from the La Mancha region of Spain, Manchego is made from the milk of sheep of the Manchega breed. The rind is hard and deep colored. The sides are imprinted with plaiting marks from the molds, and the top and bottom bear the characteristic flower imprint. The color of the paste may vary from a white to yellowish-ivory. Manchego cheese aged around 3 months are supple and moist. The flavor is fruity and grassy, with a tangy note.
