Eggplant slices dipped in an egg-parmigiano batter and breading, then layered with marinara sauce and mozzarella cheese. Serves 6-8.
Cold Eggplant Parmesan is thawed and ready to reheat. Preheat oven to 350°. Place pan in oven and bake, approximately 30 minutes. Check the center for a temperature of 165°.
Frozen Eggplant Parmesan should be thawed overnight in refrigerator before reheating.
